Hamburger Cabbage Soup

With autumn and winter not far away now, i thought I would post a recipe for a hearty, healthy soup!

I hope you like it!

 

1 small cabbage cut fine
1 lb lean ground beef
2 stalks celery sliced
3 carrots sliced
1/2 medium onion chopped
3 cloves of garlic crushed
4 cups organic beef or vegetable broth
2 large tins of diced tomatoes
1 cup sliced brown mushrooms
Red pepper flakes to taste
1 tsp oregano
1tsp rosemary
1/8 tsp celery seed
Salt and pepper to taste

In a large frying pan, brown the ground beef, place in a large pot. Using the same frying pan, saute the onion, garlic, mushrooms, carrots, celery and cabbage in a small amount of grape seed oil (sauteing the vegetables really brings out their flavor in the soup). Add the sauteed mixture to the pot with the hamburger. Add the broth and both cans of diced tomatoes. Add the oregano, rosemary, red pepper flakes and celery seed. Simmer for 2-3 hours, adding more broth if necessary. The longer the soup simmers, the better the flavor!!! Salt and pepper to taste.
